Valentine Ice Cream Cookie Sandwiches

Yields: 10 Ice Cream Sandwiches
Ingredients:
1 pouch Betty Crocker® Chocolate Chip Cookie Mix (or oatmeal chocolate chip cookie mix)
1/2 cup butter or margarine, softened
1 egg
1 quart (4 cups) strawberry or vanilla ice cream, slightly softened
1 container Betty Crocker® Decors Valentine Shapes
1 container Betty Crocker® Decors Pink and White Sprinkles
Instructions:
1. Heat oven to 375 degrees F. In medium bowl, stir cookie mix, butter and egg until soft dough forms. Shape dough into 20 balls. On ungreased cookie sheet, place balls 2 inches apart. Flatten slightly with bottom of glass.
2. Bake 12 to 14 minutes or until edges begin to brown. Cool 2 minute; remove from cookie sheet to wire rack. Cool completely.
3. For each sandwich, press about 1/3 cup ice cream between 2 cookies. Roll ice cream edges in Valentine shapes or sprinkles. Place sandwiches in 15x10x1 inch pan. Freeze about 30 minutes or until firm. Wrap individually in plastic wrap; store in freezer.
