Yields: 16 3"x3" Cookies

Ingredients:

1 pkg. Betty Crocker® Sugar Cookie Mix
2 tbsp. all purpose flour
1 lemon, finely grated
1 orange, finely grated
1 lime, finely grated
1 egg
1/3 cup butter or margarine, softened
Betty Crocker® Sugar Cookie Icing - various colors
Cake Mate® Writing Icing - various colors
Cake Mate® Glitter Writing Gels
Betty Crocker® Decorating Decors
Cake Mate® Cupcake Gems - Shimmer Silver
16 miniature marshmallows

Instructions:

1. Place sugar cookie mix in the bowl of a food processor along with the flour and citrus zests and pulse for 30 seconds until well blended. Add the remaining ingredients called for on the package and pulse until completely blended and dough forms into a ball. Knead dough gently on a lightly floured surface to ensure it has completely blended. Divide dough into 2 pieces, wrap in plastic wrap, and press into 1" thick discs and refrigerate for 30 minutes.

2. Preheat oven to 350°.

3. One at a time, roll each disc between 2 sheets of lightly floured parchment or wax paper to 1/4" thickness. Cut out 3" squares from the dough and transfer to a parchment lined baking sheet. Bake for 10-12 minutes or until just golden around the edges. Cool completely.

4. Decorate as desired with cookie icing and sugars. Use 1 mini marshmallow split for each pair of eyes.
