Ice Cream Choo Choo
Prep Time: 30 Mins
Yields: 12-16 servings
Ingredients:
1 Qt. vanilla ice cream, softened slightly
1 Qt. chocolate ice cream, softened slightly
1 - 4.9 oz jar Marble Mix'ins™ Crunch - divided
1 - 7 oz pkg. Betty Crocker® Brownie Toppers® Chocolate Icing
1 - 12 oz container defrosted whipped topping or 2 cups fresh whipped cream
1/2 cup Betty Crocker® Parlor Perfect Chocolate Sprinkles
1 - 8.4 oz jar Betty Crocker® Cupcake Icing - Red
25 chocolate covered grahams, or 10 graham crackers
4 small cookiesfor windows, such as oreo 100 calorie pack size
6 round cookies of choice for wheels, such as Pepperidge Farm Montieri
1 sugar ice cream cone for the chimney
Chocolate or Black licorice for train tracks
Instructions:
1. Spray a 10x5x3" loaf pan with non stick cooking spray and line it with aluminum foil using a paper towel to smooth the inner surface of the pan as much as possible. Freeze for five minutes to cool the pan.
2. Line the pan halfway up the sides with the softened vanilla ice cream. Loaf pan sizes can vary a fair amount - if your loaf pan is slightly smaller than the one specified above, just use a little less ice cream.
3. Squeeze the Betty Crocker Brownie Drizzle over the surface of the ice cream. Top with 1 cup Marble Mixin's Crunch. Top with the softened chocolate Ice cream. Cover with plastic wrap and freeze a minimum of 4 hours, or preferably overnight.
4. Remove the plastic wrap from the top of the loaf pan. Invert the pan onto a well chilled platter at least 4-5 inches larger than the size of the cake and remove the foil. Cover the frozen cake with a light coat of the whipped topping. Place 4 chocolate covered grahams at one end of the loaf. Top with a spoonful of whipped topping. Repeat 4 more times to create the conductors cab on the train. Spread remaining whipped topping around the cab. Push the ice cream cone into the opposite end of the cake to create the smoke stack. Freeze again for 30 minutes if the cake begins to soften.
5. Press chocolate Sprinkles along the side of the cake and decorate with Betty Crocker Cupcake Icing in Red and any color desired. Be sure the outline the rim around the cab and fill with Marble Mix'in®s Crunch flavor to resemble coal. Use a little Cupcake Icing to attach cookies to the side of the cake for wheels and windows as well as the front skirt. Freeze until ready to serve. Allow the cake to sit at room temperature 10 minutes before serving to soften slightly.
