Chocolate Mocha Pedicure Cookies

Ingredients:

Chocolate Mocha sugar cookie dough
2 3/4 cups all purpose flour
3/4 cup unsweetened Dutch processed cocoa powder
1/2 tsp salt
1 tsp. baking powder
1 cup unsalted butter or margarine room temperature
1 3/4 cups granulated sugar
2 large eggs
2 tsp Betty Crocker® Cupcake Creations® Gel Cake Flavoring in mocha

Decoration
Betty Crocker® Cookie Icing color as desired
Betty Crocker® Decorating Gel color as desired
Betty Crocker® Cupcake Gems Perfect Pearls
Cake Mate® Decor Sugar Crystals any color

Instructions:

1. Stir the flour, cocoa, salt and baking powder together in a medium sized bowl. Set aside.

2. In the bowl of your electric mixer (or with a hand mixer), beat the butter and sugar on medium speed until light and fluffy (about 3 to 4 minutes). Add the eggs, one at a time, beating well after each addition. Add the vanilla extract and beat until combined. Add the flour mixture and mix together at low speed just until a dough forms.

3. Divide the dough in half and wrap each half in plastic wrap. Refrigerate for about 30 to allow dough to rest so it is firm enough to roll.

4. One at a time, roll each piece of dough out into a 12"x8" rectangle in between two pieces of wax or parchment paper. The dough should be 1/4" inches thick. Refrigerate the sheets until you are ready to cut and bake them.

5. Preheat oven to 350°.

6. Use a 2.5 inch round cookie cutter to cut out 10 circles. Use the same cutter to cut away a little of each side of the cookie circles, leaving a shape similar to a wide apple core. Gently round the sharp corners with a knife or spoon. You should now have the base of the foot shape. For the best foot shape, the top end of the foot should be wider than the heel. Roll some scraps into a tube 1/2" inch in diameter. Cut off pieces inches 1/4" thick and press 5 into the top of each cookie, overlapping them slightly. If you want, you can make some cuts slightly larger than others so that you have different sized toes. Bake cookies on a cookie sheet for 10 to12 minutes. Allow cookies to cool completely before decorating.

7. Decorate as toes desired with Betty Crocker cookie icing, sugars and gels - and don't forget the footwear!
