Maple Cookie Sandwiches

Yields: 20 Cookie Sandwiches
Ingredients:
2 sticks butter, softened
¾ cup sugar
1 cup grade b maple syrup
1 egg
1 egg yolk
1 tsp salt
3 cups flour
1 tsp baking powder
¼ cup sour cream
2 pouches Betty Crocker® Vanilla Cookie Crème
1 bottle Betty Crocker® Autumn Sprinkles
Instructions:
1. Preheat oven to 350°F. Using an electric mixer, cream butter and sugar until lightened in color. Beat in maple syrup, egg, and egg yolk. Beat in sour cream. In a separate bowl, whisk together the flour, salt, and baking powder. Stir this mixture into the wet ingredients. Spoon dough by tablespoons onto parchment lined cookie sheets. Bake for 12-14 minutes or until edges are slightly browned. Cool completely.
2. Fill cookies with 1 tablespoon of the Cookie Crème Filling.
3. Roll sandwiches in Autumn Sprinkles.
