Valentine Linzer Cookie Sandwiches

Yields: 12 Cookie Sandwiches

Ingredients:

2 ¾ cups flour
¾ cup cocoa powder
½ teaspoon salt
1 tsp baking powder
1 cup unsalted butter, softened
1 ¾ cups granulated sugar
2 large eggs
2 tsp vanilla extract
2 pouches Betty Crocker® Vanilla Cookie Crème
1 bottle Betty Crocker® Valentine Nonpareil Decors

Instructions:

1. Whisk together the flour, cocoa powder, salt, and baking powder in a small bowl.

2. Beat butter and sugar with electric mixer until light and creamy.

3. Beat in eggs and vanilla.

4. Stir in the flour mixture until a uniform dough is formed.

5. Cover dough, and then chill in refrigerator for about an hour.

6. Preheat oven to 350°F and then roll out chilled dough to ¼ inch thickness.

7. Use a 2-3 inch circle cookie cutter or glass to cut out circles. Use a small heart cutter to cut a heart out of the center of half of the cookies.

8. Carefully transfer cookies to parchment lined cookie sheet. Bake for 8-10 minutes. Cool for 1 minute before transferring from cookie sheet to wire rack to cool completely.

9. Once cookies are cool, fill sandwiches with about 2 tablespoons of Vanilla Cookie Crème. Sprinkle Valentine Decors into heart cut out.
