Black Cherry Cookie Sandwich

Yields: 18 cookie Sandwiches
Ingredients:
2 ¾ cups flour
¾ cup cocoa powder
½ teaspoon salt
1 tsp baking powder
1 cup unsalted butter, softened
1 ¾ cups granulated sugar
2 large eggs
2 tsp vanilla extract
1 pouch Betty Crocker® Vanilla Cookie Crème
1 12 oz jar Hero Black Cherry Preserves
Instructions:
1. Whisk together the flour, cocoa powder, salt, and baking powder in a small bowl.
2. Beat butter and sugar with electric mixer until light and creamy.
3. Beat in eggs and vanilla.
4. Stir in the flour mixture until a uniform dough is formed.
5. Cover dough, and then chill in refrigerator for about an hour.
6. Preheat oven to 350°F and then roll out chilled dough to ¼ inch thickness.
7. Use a 2-3 inch circle cookie cutter or glass to cut out cookies.
8. Carefully place cookies onto parchment lined cookie sheet and bake for 5-7 minutes.
9. Cool cookies completely.
10. Squeeze about 1 tablespoon of Cookie Crème onto half of the cookies and spoon 1 tablespoon of preserves onto the remaining cookies. Put cookies together to form sandwiches.
