Raspberry Lemonade

Yields: 8 - 8oz glasses

Ingredients:

1 tube Raspberry Cream Gel Cupcake Flavor
2 cups hot water, divided
1/2 pint raspberries, sliced in half
4 lemons, zested and juiced (about 1/2 cup lemon juice)
1/3 cup sugar
1 qt. seltzer water
Cake Mate® Decor Sugar Crystals in yellow or white for rimming the glass

Instructions:

1. Heat 1/2 cup water until very warm to the touch. Squeeze 1 tube Raspberry Cream Gel Cupcake Flavor into a medium sized bowl and whisk until completely dissolved. Stir in remaining 1-1/2 cup cold water. Stir in Raspberries and lemon zest. Divide the liquid and fruit evenly between 2 standard ice cube trays. Freeze until completely frozen.

2. Place sanding sugar in a small rimmed dish. One at a time run the edge of a squeezed lemon wedge around the rim of each glass, invert the glass in dip into the sugar so it adheres to the glass.

3. Stir the lemon juice with the sugar in a small bowl until the sugar is dissolved.

4. Place 3 or 4 ice cubes into each glass. Divide the lemon/ sugar mixture between each glass. Top off with seltzer water and a lemon slice and serve.
